I have always loved food. Luckily for me, I’ve been able to turn this love of food into a career in cooking, and have spent the last twenty years sharing this passion with friends, students, co-workers, and now television viewers. 

I began my food career as a dish washer and line cook for a small independent bistro in Boca Raton FL called The Cove. This gave me a little taste of the industry, which was all I needed to realise that I truly wanted to pursue a culinary career. I enrolled in culinary school with formal training from the University San Francisco of Quito, Ecuador obtaining a degree on Culinary Arts and Food & Beverage Administration. During my culinary studies i stared working at several restaurants to earn money to pay my career.

My focus since my beginning was to follow the steps of important chefs as Norman Van Aken and Charlie Trotter. This brought me to the United States to learn from them. Norman Van Aken was a true inspiration on what turned to be my culinary style, Latin Asian Cuisine.

During this time i also worked for Brinker company at Macaroni Grill and learned the basics on managing a chain restaurant.

After three years of work in the United States, i came back to Ecuador and got hired by my culinary School to teach culinary techniques and run the Gourmet Restaurant at the campus.

While there, I taught culinary students on the hot line during lunch service, and held classes in basic culinary technique in the evenings. I spent four years teaching at USFQ.

After this i worked for several restaurants in Quito and became a renown Chef of the Country. This gave me the chance to be one of the chefs that host and serve dinners for The 53rd edition of Miss Universe that took place on 2004. By this time i had a culinary live Tv show broadcast nation wide on Gamavision.

My passion for my culinary roots brought me back to Colombia and left behind all the stories in Ecuador. Once in Bogota, i started working as a culinary teacher at several culinary Schools, worked as Chef de Cuisine  for several restaurants including Asia de Cuba and hosted a culinary Tv show. By that time i started my investigation on the recuperation of all the ancestral ingredientes and culinary techniques that were used by marginal communities of Colombia. As a give back to the community i teached all the people interested in learning about culinary techniques and the development of new products that could be sold by them.  This lead me to work with the government and began participating nation wide in committees that work on this subject. Now i am spokesman of all this knowledge and research of Colombian ancestral cuisines. This has taken me to various countries around the world with culinary demonstrations and made me participate on the most important latin american food network named elgourmet.com with 4 seasons one the air.

All this work has given me several recognitions by the authorities of my country and the Culinary world. Today i live in Medellin, Colombia and co-own a restaurant chain named SushiLIght  (www.sushilight.com) with 7 restaurants, 150 employees and a culinary concept were we mix latin american flavours with asian cuisines. On september 2016 my book about asian and latin american flavours will be published and available for the general public.

I belong to several culinary organisations including the Academie Culinaire de France, Chaine des Rotisseurs and the Colombian Chefs Federation.

I am enjoying the process of expanding my interest and involvement in the culinary world.
